Otto P. Baur soon became the Colorado king of ice cream, candies, cakes and other creamy, sugary sweets. To accommodate his fast- growing Denver business, he moved in 1891 to the still-standing three-story, red-brick landmark at 1512 Curtis St. Baur's tasty empire continued to grow after his death in 1904. His son-in-law and then grandson took over, adding a restaurant in 1918. Denver's oldest and sweetest restaurant story began with Otto Paul Baur's 1846 birth in Wurtemberg, Germany, seven years before his family came to Pennsylvania. There and in New York City, Otto learned the bakery and confectionery business. When his sister Thusnelda (I don't make these names up) and her husband Julius F. Stockdorf moved to Denver and opened the Pennsylvania House, a hotel and restaurant in the 1400 block of Blake Street, Otto came West to join them. Otto found work at Denver's pioneer bakery, City Bakery, then moved on to other establishments, including a stint as cook for the Hayden Expedition, which was mapping Colorado during the 1870s. There he supposedly saved the party by treating hostile Indians to his sweet rolls. By 1872, Otto had started the O.P. Baur Confectionery on Larimer Street and soon added a bakery and catering business. By 1878, the O.P. Baur Company advertised "Fine Confections" and "an endless variety of goods for decorating Christmas Trees, Fancy Boxes, cornucopias, etc." Baur claimed to have invented the ice cream soda before its supposed introduction at the 1876 Philadelphia Centennial Exposition. According to Otto, a hung-over regular relied on ice to cool carbonated soda water for his morning cure. When the iceman was late, Otto used ice cream instead. Thus was born the ice cream soda. Baur's featured a magnificent marble soda fountain and splendiferous white and gold candy and pastry counters that resembled an altar in a neoclassical temple. This shrine featured Baur's famous Chocolate Almond Mija Toffee and 16-layer pound cakes that stood 7 inches tall. Not to mention chocolate tortes, macaroons, eclairs, lady fingers, jelly rolls, rum squares and crystal cuts (hard, clear candy) that also served as hangable ornaments.   During the Great Depression, Baur's treated Denver's street urchins to free ice cream, creating a mob scene on Curtis Street. Big-hearted Baur's also provided sweet treats to local hospitals and orphanages.
